This is a two pot meal.
Ingredients
Instant Mashed Potatoes, 1 packet
Ground Beef, 1 lb.
Small Yellow Onion
Can Corn
Can Kidney Beans
Can Chopped Green Chilies
Cumin
Chili Powder
Shredded Mexican Style Cheese, one package
Directions
In a larger pot, start browning the ground beef. Chop the onion and add it to the beef. While the beef and onions are cooking, in another pot begin preparing the mashed potatoes according to the package directions. Open the corn and kidney beans and drain them into a waste water container. Open the chili peppers. Add the corn, kidney beans, and chili peppers to the ground beef and onions. Add about a tablespoon or so of cumin and a teaspoon or so of chili powder (I measure this in the palm of my hand). Cook until the beef is done. Spread the mashed potatoes over the top of the beef-onion-corn-kidney bean-chili pepper mix. Sprinkle half the package of shredded Mexican-style cheese on top of the mashed potatoes. Cover the pot with a lid and let the cheese melt a little before digging in.
Servings? I don’t know. Two hungry river ranger rangers usually eat all of this up. Any leftovers taste pretty good the next day wrapped in a tortilla for breakfast or lunch.
